The hotel has a fascinating history: it was built on the site of a 12th century monastery founded by a Flemish Lord who wanted to provide a safe, welcoming place to stay for Compostela pilgrims. At the time, pilgrims to to the shrine of St. James would travel along the Roman road between Lyon and Toulouse, through Aubrac with its dark, thief-ridden forests. The Dômerie d'Aubrac, which could host up to five hundred pilgrims, was later described as the "great Saint Bernard of France" by Chateaubriand himself.
